Barbeque Chicken With Green Apple Salad

The best way to enjoy a summer afternoon is with a barbeque and a sweet, refreshing salad. The recipe I have made below is a perfect chicken dish, which is both tasty and filling. Try out my recipe for a barbeque chicken with a green apple salad below!

  • 2 Chicken Maryland
  • 1 Carrot
  • 2 Onions
  • 3 Cloves of Garlic
  • 1 Bulb of Ginger
  • 11 Cherry Tomatoes
  • 2 tsp Curry Powder
  • 2 tsp Chilli Powder
  • 2 tsp Allspice Powder
  • 2 tsp 5 spice Powder
  • Smoked Paprika
  • 2 tbsp Dijon Mustard
  • 4 tbsp of Barbeque sauce
  • 2 tsp of honey
  • ½ cup of red wine Vinegar
  • Handful of Spinach
  • Coriander
  • Mint
  • 3 Sprigs of Rosemary
  • Spring Onions
  • 2 sticks of Celery
  • Salt
  • Pepper
  • Olive Oil

Barbeque Chicken

  • Turn on a pot to start heating it. Peel the carrots, onions and celery. Roughly chop these vegetables into larger cubes and add into the pan with oil.
  • Add in three cloves of crushed garlic, salt as needed, chopped ginger, smashed coriander stalk, whole cherry tomatoes, rosemary, five spice, allspice, curry powder, chilli powder, Dijon mustard, red wine vinegar, barbeque sauce and honey to make the seasoning for the barbeque.
  • Mix the pot well and add in 2 cups of water and bring to a boil. Once the veggies are cooked, take off the heat and remove the rosemary and coriander stalks from the pot. Allow to cool.
  • Once cooled, pour into a blender and blend until smooth. Strain through a sieve and rest in the fridge.
  • Start heating up a pan on the heat, meanwhile start working on the chicken. Cut away the extra skin and score the whole chicken. Season with salt, pepper and olive oil on both sides.
  • Start scooping the marinade onto the chicken generously.
  • Now that the pan is well heated, place the chicken onto the pan and allow it to start cooking. Once it has a char on it, take it off the heat add on more marinade and place the chicken in the oven at 180 degrees to finish cooking.
  • Once cooked, take out of the oven and baste with a brush fashioned out of coriander leaves.

Green Apple Salad

  • Chop a green apple into slivers and add to a large salad bowl. Add in thinly sliced celery, spring onions and fresh spinach. Toss together to finish your salad.
