Carrot And Apple Muffin With Cream Cheese Frosting

Muffins are a tasty snack for any time of day, however with the sugar and flour they can sometimes become unhealthy. In this recipe there is no sugar in the muffins or the frosting making it a healthy and nutritional snack packed with fruits and delicious flavours. Try out my recipe for sugarless muffins below!

  • 2 carrots
  • 1 apple
  • 3 cups of wholemeal flour
  • 2 teaspoons of cinnamon powder
  • 200g of raisins
  • 4 cups of soy milk
  • 4 tablespoons of coconut oil
  • 2 tablespoons of honey
  • 2 teaspoons of baking soda
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of apple cider vinegar
  • 250g of cream cheese
  • 2 vanilla beans
  • Preheat your oven at 180 degrees Celsius.
  • Grate two carrots, and chop the apple into thin slivers, add in the raisins and mix together in a large bowl.
  • In a separate bowl combine the wholemeal flour, cinnamon flour, baking soda, vanilla extract, apple cider vinegar, coconut oil and 2½ cups of soy milk. Whisk together until well combined. If the mix needs to be runnier, add in more soy milk.
  • Incorporate the batter into the bowl with the apple and carrot mix.
  • Prepare the muffin tray by coting with butter and dusting with flour. Begin to add in the batter until the divots are filled 3/4s of the way through.
  • Add in the tray to the muffin and bring the heat down to 160 degrees Celsius. Bake until cooked, around 30 minutes.
  • To make your frosting; ensure that your cream cheese is at room temperature and melted. Combine the cheese with the seeds from the vanilla beans, 2 tablespoons of honey and 1 cup of soy milk.
  • Whisk together to create your cream cheese frosting.
  • Once the muffins are cooled, begin frosting them liberally.
  • Enjoy!
