Chilli & Local Kumu stuffed Fish

A Fish dish stuffed with flavour, local kumu and some chilli. Pairs perfectly with sun, sea and sand (and wine).

  • 1 Fish
  • Spring onions crushed
  • Walangwur or kumu of your choice crushed
  • ½ tsp Lime juice
  • 5g Salt
  • 4 Strings or more depending on size of fish
  • Olive oil
  • Fillet fish to remove ribcage and back bone (keep fillets attached to head and tail)
  • Keep fish fillets exposed
  • Add spring onions to fillets
  • Stuff the kumu into fillets
  • Add lime juice over fish and filling
  • Season with salt
  • Carefully fold one fillet over filling
  • Tie fillets together with string to secure
  • Drizzle olive oil over fish
  • Grill on the fire!
