Gluten-Free Coconut And Peanut Butter Cookies

Cookies are a quick and easy snack that can be made to satisfy any sweet cravings. With this recipe the cookies are made gluten free but maintain flavour with peanut butter, coconut and chocolate. Try out this simple and tasty recipe below!

  • 100g protein powder
  • 20g coconut flour
  • 2 tsp baking powder
  • 4 tbsp honey
  • 50g peanut butter
  • 45g oats
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 vanilla bean
  • 50g butter
  • 100g cream
  • 50g Desiccated coconut
  • Dark chocolate bar
  • 50ml Soy milk
  • Preheat the oven to 180 degrees Celsius.
  • Melt the honey and butter together on a stovetop. Once completely melted and blended, take off the heat.
  • In a bowl add protein powder, peanut butter, desiccated coconut, coconut flour, oats, baking powder, one whole egg, one egg white and vanilla bean seeds.
  • Add in the butter and honey mixture and mix the bowl. It may not be necessary to use the whole lot.
  • Prepare a baking tray with parchment paper. Take a small amount, roll into a ball and flatten out onto the tray. Make some indentations with a fork.
  • Bring the temperature down to 150 degrees Celsius.
  • Place the tray into the oven and allow it to bake for 20 minutes.
  • Prepare chocolate sauce by melting the chocolate and soy milk together.
  • Dip the cookies into the chocolate sauce and allow it to set.
  • Enjoy!
