Kaukau Pancakes With Galip Nut Granola

Kaukau is a root vegetable used in PNG cooking, typically as an accompaniment to protien or as a part of a larger meal. In today’s recipe, I put a twist on some everyday breakfast pancakes by incorporating them with Kaukau. To round off this meal, I serve Galip Nut Granola with the pancakes which give a nutty, crunchy flavour to the dish. Granola

  • 2 cups of granola
  • 100g of desiccated coconuts
  • ½ cup raisins
  • 1 tsp salt
  • 5 tsp almond flakes
  • 1 tsp vanilla essence
  • 2 cups galip nuts
  • 1 cup honey

Pancakes

  • 3 kaukaus
  • Salt as needed
  • 250g protein powder
  • 1 tbsp desiccated coconut
  • 5 grams cinnamon powder
  • 3 cups whole meal flour
  • 2 eggs
  • 2.5 grams of baking powder
  • 2 cups of soy or full cream milk
  • 3 tbsp honey

Granola

  • Add the oats, desiccated coconuts, raisins, vanilla essence, a pinch of salt, almond flakes and vanilla essence into a bowl
  • Add water and honey into a pan, and heat to make a syrup. Bring to a boil and turn off the stove.
  • Roughly break and add the galip nuts into the bowl. Stir the ingredients together and then add in the coconut oil.
  • Add in the syrup to the bowl and mix together. Pour in some extra honey to make it stick together better.
  • Line a baking sheet with parchment paper and scoop in the granola mix. Spread evenly and place in the oven at 120 degrees for 40 minutes.
  • Take the granola out of the oven, stir and sprinkle with desiccated coconut.

Pancakes

  • Peel and dice the kaukau and add to salted, boiling water.
  • Once cooked through, strain out the water from the kaukau and mash up fully.
  • Add in the protein powder, a pinch of salt, a pinch of desiccated coconut, cinnamon powder, whole meal flour, eggs and mix well to make a dough like consistency.
  • Add in the baking powder and milk. Combine to make the batter. Finish off the batter with a generous scoop of honey.
  • Heat up a pan and oil well. Once heated, add in a dollop of pancake mixture. While still cooking, add in chopped strawberries to the pancake.
  • Once cooked well enough, flip the pancake and sear the other side. Take off the heat and garnish with chopped bananas
  • Serve up with granola and enjoy!.
