Mango Ginger Fish

Summer and spring come together in this wonderful dish that infuses the beautiful flavour of the Rabaul Mango with a fish of your choice!

  • 1 Fish
  • 1 Ginger Knob
  • ½ Lime juice
  • 1 Mango of your choice
  • Salt & Pepper to Taste
  • Score the fish with the knife
  • Season the fish with salt & pepper
  • Set the fish aside
  • Cut up mango & add to bowl
  • Grate ginger over mango
  • Add lime juice
  • Massage mango marinade into fish scores
  • Stuff fish with the rest of the marinade
  • Place onto press rack
  • Bake over charcoals
  • Flip rack over after 8 – 10 minutes to have an equal cook
