Roast Chicken With Homemade Stuffing

Nothing beats a festive meal or family gather with your loved ones. Impress them with a signature whole Roast Chicken with a home made stuffing packed full of flavour

  • 1 bunch aupa
  • 3 Sprigs rosemary
  • 3 tsp Ginger
  • 3 cloves Garlic
  • 1 Onion
  • 1 Lime
  • 500g breadcrumbs
  • Salt as needed
  • Pepper as needed
  • Olive oil
  • Butter
  • Whole Chicken
  • Preheat your oven to 220 degrees.
  • Chop the onion, ginger, garlic, aupa and rosemary. Add these to a large mixing bowl with breadcrumbs.
  • Drizzle in olive oil, two tbsp of salt and pepper as you needed. Mix well to combine.
  • Chop off the neck from your chicken and start adding the stuffing into the cavity of the bird.
  • Once the chicken is fully stuffed, take a piece of twine and start tying it up. Make sure to tightly fasten your chicken.
  • Transfer to a baking dish and season the surface of the chicken with salt, pepper and olive oil.
  • Add butter and rosemary to the pan and place in the oven for 10 minutes at 180 degrees and 1 hour at 160 degrees.
  • Once out of the oven, carve to separate the wings, thighs, drumsticks and breast pieces.
  • Serve with stuffing and stock from the baking tray.
