Spiced Tofu And Pork Burger

A burger is a classic food for any meal of the day. Although they are tasty, burgers can be quite unhealthy. In this recipe I kept the essence of a traditional burger the same and added some extra elements that make this a nutritious and delicious tofu and pork burger.

  • Pork Mince
  • 1 Apple
  • 1/2 a head of Red Cabbage
  • Tofu
  • Cheese
  • 2 tbsp olive oil
  • Pepper to taste
  • Salt to taste
  • 2 tbsp red wine vinegar
  • 2 tbsp honey
  • 1 onion
  • 2 cloves of garlic
  • 3 tsp fennel
  • 3 tsp chilli powder
  • 3 tsp paprika
  • 1 tsp allspice
  • Bunch of market greens
  • 500g of mayonnaise
  • One bunch of parsley
  • 1 tbsp Blended oats or breadcrumbs
  • 2 tsp of vinegar
  • Begin by thinly slicing the cabbage and apple.
  • Next heat up a pan with olive oil and toss in the cabbage and apple. Add pepper to your taste.
  • Let the cabbage start to caramelise and add in the red wine vinegar and honey.
  • Add in a quarter cup of water and allow to come to a boil and reduce. This is the marmalade.
  • Finely chop the onion and garlic and add to the pork mince along with salt, pepper, fennel powder, chilli flakes, paprika, allspice and blended oats or breadcrumbs. Mix well to combine.
  • Start making your patties by rolling the mince into a ball and then flattening to match the size of your burger bun. Remember that while the meat cooks, it will reduce in size.
  • Start heating up a well-oiled pan and gently add in the patty. Once the patty develops a crust and a good colour, flip and allow the other side to cook.
  • Once well seared on both sides, top the patties with cheese and put in an oven at 180 degrees.
  • To spice the tofu, add in fennel, chilli powder, allspice and salt.
  • To a grill pan, add in a drizzle of olive oil and sear burger buns and tofu until well cooked. The tofu will take a longer cook time than the buns.
  • Start to cook off the greens until wilted, add a quarter cup of salt and pepper to taste.
  • To make your aioli sauce, add in one finely chopped clove of garlic, paresly, pepper, paprika and fennel.
  • Whisk together until well combined and add in 2 tsp of vinegar.
  • Start building your burger by adding a generous amount of aioli on the burger bun and start stacking the patty, cabbage and apple marmalade, tofu, greens and then the top burger bun in that order.
  • Serve hot and enjoy!
